Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Grate the zucchinis and place them in a bowl.
  2. Add salt and let them sit for 10 minutes.
  3. Squeeze out excess moisture from the zucchinis.
  4. In a mixing bowl, combine zucchinis, flour, Parmesan cheese, egg, and pepper.
  5. Heat olive oil in a skillet over medium heat.
  6. Drop spoonfuls of the mixture into the skillet and flatten slightly.
  7. Cook for 3-4 minutes on each side until golden brown.
  8. Remove and place on paper towels to drain excess oil.
