These healthy zucchini fritters make a great side dish. They are crispy, flavorful, and easy to prepare.
Ingredients

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Grate the zucchinis and place them in a bowl.
- Add salt and let them sit for 10 minutes.
- Squeeze out excess moisture from the zucchinis.
- In a mixing bowl, combine zucchinis, flour, Parmesan cheese, egg, and pepper.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet and flatten slightly.
- Cook for 3-4 minutes on each side until golden brown.
- Remove and place on paper towels to drain excess oil.
Notes
- Serve warm with a dip of your choice.
- Store leftovers in an airtight container in the fridge.
- Reheat in the oven for best texture.
