Instructions

  1. Rinse quinoa under cold water.

  3. Add quinoa, reduce heat, and simmer for 15 minutes.
  4. Remove from heat and let it sit covered for 5 minutes.
  5. Fluff quinoa with a fork and let it cool.

  7. Add cooled quinoa to the vegetable mix.
  8. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  9. Pour dressing over the quinoa and vegetables.
  10. Toss gently to combine and top with feta cheese.
  11. Serve chilled or at room temperature.
