Instructions
- Rinse quinoa under cold water.

- Add quinoa, reduce heat, and simmer for 15 minutes.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
- Add cooled quinoa to the vegetable mix.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the quinoa and vegetables.
- Toss gently to combine and top with feta cheese.
- Serve chilled or at room temperature.
