  • 1 cup breadcrumbs

  • 1/4 cup fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the rack of lamb with salt and pepper.
  3. In a pan, heat olive oil over medium heat. Sear the lamb for 2-3 minutes on each side until browned.
  4. Remove from heat and spread Dijon mustard over the meat.
  5. In a bowl, mix breadcrumbs, garlic, parsley, rosemary, and thyme.
  6. Press the breadcrumb mixture onto the mustard-coated lamb.
  7. Place the lamb in the oven and roast for 20-25 minutes for medium-rare.
  8. Let it rest for 5 minutes before slicing.
