Ingredients

- 1 rack of lamb (about 8 ribs)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh rosemary, chopped
- 1/4 cup fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season the rack of lamb with salt and pepper.
- In a pan, heat olive oil over medium heat. Sear the lamb for 2-3 minutes on each side until browned.
- Remove from heat and spread Dijon mustard over the meat.
- In a bowl, mix breadcrumbs, garlic, parsley, rosemary, and thyme.
- Press the breadcrumb mixture onto the mustard-coated lamb.
- Place the lamb in the oven and roast for 20-25 minutes for medium-rare.
- Let it rest for 5 minutes before slicing.
