Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix ground turkey, breadcrumbs, Parmesan, egg, garlic, parsley, basil, lemon zest, salt, and pepper.
- Form the mixture into meatballs.
- Place meatballs on a baking sheet lined with parchment paper.
- Toss mixed vegetables with olive oil and season with salt and pepper.
- Spread vegetables around the meatballs on the baking sheet.
- Bake for 20-25 minutes or until the meatballs are cooked through.
