Ingredients

  • 1 cup boiling water
  • 1 tsp baking soda
  • 100g butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup golden syrup

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Chop the dates and mix with boiling water and baking soda. Let it sit for 10 minutes.
  3. In a bowl, cream the butter and brown sugar together.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the date mixture and golden syrup.
  6. In a separate bowl, combine the flour and baking powder.
  7. Gradually add the dry ingredients to the wet mixture until just combined.
  8. Pour the batter into a greased baking pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let it cool before serving.
