Ingredients

- 200g pitted dates
- 1 cup boiling water
- 1 tsp baking soda
- 100g butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup golden syrup
Instructions
- Preheat your oven to 180°C (350°F).
- Chop the dates and mix with boiling water and baking soda. Let it sit for 10 minutes.
- In a bowl, cream the butter and brown sugar together.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the date mixture and golden syrup.
- In a separate bowl, combine the flour and baking powder.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Pour the batter into a greased baking pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Serve warm with ice cream or whipped cream.
- Store leftovers in an airtight container.
- Add nuts for extra texture if desired.
