Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, brown sugar, honey, and vegetable oil.
  3. Add eggs and mix well.
  4. In another bowl, combine whole wheat flour, oats, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. If using, fold in walnuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.
