Ingredients

- 2 cups orzo pasta
- 1 lb chicken breast, diced
- 2 cups chicken broth
- 1 cup spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add garlic and sauté for 1 minute.
- Add chicken and cook until no longer pink.
- Stir in orzo and chicken broth.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add spinach and tomatoes, cook for another 5 minutes.
- Stir in Parmesan cheese, season with salt and pepper.
- Serve warm.

- Can substitute chicken with turkey or tofu for variety.
- Add vegetables like bell peppers for extra nutrition.
