A delicious high protein potato salad recipe that is easy to make and perfect for any meal.
Ingredients

- 2 pounds of potatoes
- 1 cup of Greek yogurt
- 1/2 cup of diced celery
- 1/2 cup of diced red onion
- 1/2 cup of chopped pickles
- 1/4 cup of fresh parsley
- 2 tablespoons of mustard
- Salt and pepper to taste
Instructions
- Wash and peel the potatoes.
- Cut potatoes into cubes and boil them until tender.
- Drain and let cool.
- In a large bowl, mix Greek yogurt, mustard, salt, and pepper.
- Add cooled potatoes, celery, red onion, pickles, and parsley to the bowl.
- Toss everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Use any type of potatoes you prefer.
- Feel free to add other vegetables.
- This salad can be made a day in advance.
