- 1 pound ground beef
- 4 medium potatoes, sliced
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef with the chopped onion.
- Layer the sliced potatoes in a baking dish.
- Add the browned beef and onion mixture on top of the potatoes.
- Spread the mixed vegetables over the beef.
- Pour the cream of mushroom soup over the entire dish.
- Sprinkle with cheese, salt, and pepper.
- Bake for 1 hour or until the potatoes are tender.
Notes
- You can substitute ground turkey or chicken for the beef.
- Feel free to use fresh or frozen vegetables.
