A refreshing kale salad perfect for holiday gatherings.
Ingredients
Scale
- 1 bunch kale, chopped
- 1 cup shredded carrots
- 1/2 cup dried cranberries
- 1/2 cup sunflower seeds
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Wash and chop the kale.
- In a large bowl, combine kale, carrots, cranberries, sunflower seeds, and feta.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Let the salad sit for 10 minutes before serving.
Notes
- Use fresh kale for best flavor.
- Adjust sweetness by adding more or less honey.
- This salad can be made a day in advance.
