Ingredients

Scale
  • 1 bunch kale, chopped
  • 1 cup shredded carrots
  • 1/2 cup dried cranberries
  • 1/2 cup sunflower seeds
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Wash and chop the kale.
  2. In a large bowl, combine kale, carrots, cranberries, sunflower seeds, and feta.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  4. Pour the dressing over the salad and toss to coat.
  5. Let the salad sit for 10 minutes before serving.
