- 2 medium coconuts
- 4 cups of water
Instructions
- Crack open the coconuts and drain the water into a bowl.
- Remove the coconut meat from the shell.
- Chop the coconut meat into small pieces.
- Add the chopped coconut meat and water to a blender.
- Blend on high until smooth.
- Strain the mixture through a cheesecloth or fine mesh strainer into a bowl.
- Squeeze out as much liquid as possible.
- Store the coconut milk in an airtight container in the refrigerator.

- Use the leftover coconut pulp in smoothies or baking.
- Homemade coconut milk lasts about 4-5 days in the fridge.
