Description
Delicious homemade eclairs filled with pastry cream and topped with chocolate glaze.
Ingredients

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 2 cups milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 4 ounces dark chocolate
Instructions
- Preheat your oven to 400Β°F (200Β°C).
- In a saucepan, combine water and butter; bring to a boil.
- Add flour and salt, stirring until the mixture forms a ball.
- Remove from heat and let cool slightly.
- Beat in eggs one at a time until smooth.
- Pipe the dough onto a baking sheet.
- Bake for 20-25 minutes until golden and puffed.
- For the filling, heat milk in a saucepan.
- In a bowl, whisk sugar, cornstarch, and egg yolks.
- Gradually add hot milk, then return to heat until thickened.
- Stir in vanilla and let cool.
- Whip cream and fold into the cooled pastry cream.
- Fill eclairs with cream using a piping bag.
- Melt chocolate and pour over filled eclairs.
Notes
- Store eclairs in the refrigerator.
- Use a serrated knife to cut the eclairs for filling.
- Experiment with different fillings such as fruit or coffee.
