Description

This recipe makes moist and delicious chocolate cupcakes from scratch.


Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup boiling water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a muffin tin with cupcake liners.
  3. In a bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add oil, eggs, and vanilla. Mix well.
  5. Stir in buttermilk until combined.
  6. Slowly add boiling water to the batter.
  7. Pour batter into cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
