- 200 grams (about 1 cup) pitted dates, chopped
- 250 ml (1 cup) boiling water
- 1 teaspoon baking soda
- 115 grams (1/2 cup) unsalted butter, softened
- 150 grams (3/4 cup) brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 190 grams (1 1/2 cups) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- In a bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let them soak for about 15-20 minutes until softened. Once cooled, mash the dates slightly with a fork to create a chunky paste.
- Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. This should take about 3-5 minutes using an electric mixer.
- Beat in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the soaked date mixture. Start and end with the flour mixture, mixing until just combined. Be careful not to overmix.
- Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Once cooled, slice the cake and serve it on a simple white plate. This Date Butter Cake is delicious on its own, but you can also serve it with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
