- 1/4 cup honey
- 1/4 cup unsalted butter, melted
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the sweet potato puree, honey, and melted butter.
- In another bowl, combine cornmeal, flour, baking powder, and salt.
- Gradually add the dry ingredients to the sweet potato mixture.
- Add milk and eggs, stirring until just combined.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let it cool slightly before serving.
Notes
