Description
A moist and flavorful Honey Date Tea Cake perfect for tea time or dessert.
Ingredients
Scale
- 200 grams (1 ½ cups) all-purpose flour
- 150 grams (¾ cup) granulated sugar
- 100 grams (½ cup) unsalted butter, softened
- 2 large eggs
- 120 ml (½ cup) milk
- 100 grams (1 cup) chopped dates, pitted
- 60 ml (¼ cup) honey
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- Optional: powdered sugar for dusting
Instructions
- Preheat the oven: Begin by preheating your oven to 175°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
- Prepare the dates: If your chopped dates are not soft, you can soak them in warm water for about 10 minutes, then drain them.
- Cream the butter and sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-5 minutes.
- Add the eggs: Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract and honey until fully combined.
- Mix the dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined; do not overmix.
- Fold in the dates: Gently fold the chopped dates into the batter using a spatula until evenly distributed.
- Pour into the pan: Transfer the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake the cake: Place the cake in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Serve: Once cooled, you can dust the top with powdered sugar if desired. Slice the cake and serve it warm or at room temperature.
Notes
- For added flavor, consider adding a teaspoon of ground cinnamon or nutmeg to the dry ingredients.
- Ensure your dates are fresh for the best texture and sweetness.
