Ingredients

  • 4 chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges

Instructions

  1. In a bowl, mix honey, lime juice, olive oil, garlic powder, salt, and pepper.
  2. Place chicken in a zip-top bag and pour marinade over it. Seal and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from marinade and discard the marinade.
  5. Grill chicken for 6-7 minutes on each side until cooked through.
  6. While chicken is grilling, toss veggies in olive oil, salt, and pepper.
  7. Add veggies to the grill and cook for about 5-7 minutes until tender.
  8. Serve chicken with grilled veggies on the side.

  • For extra flavor, let the chicken marinate longer.
