Ingredients

- 1 lb Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss Brussels sprouts with olive oil, salt, and pepper.
- Spread Brussels sprouts on a baking sheet and roast for 20-25 minutes until tender.
- In a small bowl, whisk together honey, Dijon mustard, and apple cider vinegar.
- In a large bowl, combine roasted Brussels sprouts, walnuts, cranberries, and feta cheese.
- Drizzle with honey mustard dressing and toss to coat.
- Serve warm or at room temperature.
