Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 1/2 cup pistachios, chopped
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and honey.
- Add in the vanilla extract and mix well.
- In another bowl, combine flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Fold in the chopped pistachios.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes until lightly golden.
- Let cool before serving.
Notes
- Store cookies in an airtight container.
- Choose raw honey for a more intense flavor.
- Optional: sprinkle sea salt on top before baking.
