A hearty Hungarian goulash made keto-friendly.
Ingredients

- 2 lbs beef chuck, cubed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tbsp paprika
- 1 tsp caraway seeds
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 2 cups bell peppers, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic, sauté until softened.
- Add the beef and brown on all sides.
- Stir in paprika and caraway seeds.
- Add diced tomatoes and beef broth. Bring to a boil.
- Reduce heat and simmer for 1.5 to 2 hours.
- Add bell peppers and cook for another 30 minutes.
- Season with salt and pepper before serving.
Notes
- Serve with sour cream for added flavor.
- This dish can be made ahead and reheated.
