A flavorful Indian pumpkin curry that is both hearty and nutritious.
Ingredients

- 2 cups pumpkin, cubed
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- 2 cups water
- Fresh coriander for garnish
Instructions
- Heat oil in a pan over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook for a minute.
- Add chopped tomatoes and cook until soft.
- Add pumpkin, turmeric, coriander powder, and salt; mix well.
- Add water and bring to a boil.
- Reduce heat and let it simmer until pumpkin is tender.
- Add garam masala and cook for another 5 minutes.
- Garnish with fresh coriander and serve hot.
