Ingredients

  • 2 cups pumpkin, cubed
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 cups water
  • Fresh coriander for garnish

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Add ginger-garlic paste and cook for a minute.
  5. Add chopped tomatoes and cook until soft.
  6. Add pumpkin, turmeric, coriander powder, and salt; mix well.
  7. Add water and bring to a boil.
  8. Reduce heat and let it simmer until pumpkin is tender.
  9. Add garam masala and cook for another 5 minutes.
  10. Garnish with fresh coriander and serve hot.
