Description
A quick and easy recipe for white chicken chili made in an Instant Pot.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 cup chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Turn on the Instant Pot and select the sauté function.
- Add onion and garlic, cook until soft.
- Add chicken, beans, corn, broth, cumin, chili powder, salt, and pepper.
- Seal the Instant Pot lid and set to high pressure for 15 minutes.
- Once cooking is complete, quick release the pressure.
- Shred the chicken with two forks and stir to combine.
- Serve hot with your choice of toppings.
Notes
- Can substitute turkey for chicken.
- Add jalapeños for heat.
- Top with cheese, sour cream, or cilantro if desired.
