Ingredients

- 3 pounds corned beef brisket
- 10 cups water
- 1 large onion, quartered
- 2 cloves garlic, crushed
- 4 carrots, peeled and cut into chunks
- 4 potatoes, peeled and quartered
- 1 small head of cabbage, cut into wedges
- 1 tablespoon mustard seeds
- 1 teaspoon black peppercorns
- 2 bay leaves
Instructions
- Place the corned beef in a large pot.
- Add water, onion, garlic, mustard seeds, peppercorns, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 2.5 to 3 hours.
- Add carrots and potatoes; cook for 20 minutes.
- Add cabbage; cook for an additional 15 minutes.
- Remove the beef and let it rest before slicing.
- Serve with vegetables.
