Description

A refreshing Italian Grinder Pasta Salad that combines pasta with a variety of fresh vegetables and Italian meats.


Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1 cup salami, diced
  • 1 cup pepperoni, diced
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, black olives, salami, pepperoni, and mozzarella cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Refrigerate for at least 30 minutes before serving.
