Description
A refreshing Italian Grinder Pasta Salad that combines pasta with a variety of fresh vegetables and Italian meats.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup black olives, sliced
- 1 cup salami, diced
- 1 cup pepperoni, diced
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, black olives, salami, pepperoni, and mozzarella cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Refrigerate for at least 30 minutes before serving.
Notes
- Feel free to add more vegetables if desired.
- Can be made a day in advance for better flavor.
- Serve chilled or at room temperature.
