A refreshing Italian Grinder Tortellini Salad packed with flavor and texture.
Ingredients

- 16 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup salami, diced
- 1/2 cup mozzarella balls
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions. Drain and let cool.
- In a large bowl, combine the tortellini, cherry tomatoes, cucumber, red onion, black olives, salami, mozzarella, and basil.
- In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve cold for the best flavor.
- Feel free to add other vegetables or proteins as desired.
- This salad can be made a day in advance.
