A hearty and flavorful soup made with ground chicken and Italian spices.
Ingredients

- 1 lb ground chicken
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 cup diced carrots
- 1 cup diced celery
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the onion and garlic, sauté until soft.
- Add the ground chicken and cook until browned.
- Add the carrots, celery, and tomatoes, cook for 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Stir in the spinach and Italian seasoning, simmer for 15 minutes.
- Season with salt and pepper to taste.
- Serve hot.

- Adjust seasoning as per your taste.
- Can add other vegetables like zucchini or bell peppers.
- Store leftovers in the refrigerator for up to 3 days.
