Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the onion and garlic, sauté until soft.
  3. Add the ground chicken and cook until browned.
  4. Add the carrots, celery, and tomatoes, cook for 5 minutes.
  5. Pour in the chicken broth and bring to a boil.
  6. Stir in the spinach and Italian seasoning, simmer for 15 minutes.
  7. Season with salt and pepper to taste.
