Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 cup low-sodium chicken broth
  • 2 tablespoons capers, rinsed
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Dredge chicken in flour, shaking off excess.
  3. Heat olive oil in a skillet over medium heat.
  4. Cook chicken for 5-7 minutes on each side until golden brown. Remove from skillet.
  5. Add garlic to the skillet and sauté for 1 minute.
  6. Stir in lemon juice, chicken broth, and capers.
  7. Return chicken to the skillet and simmer for 5 minutes.
  8. Garnish with fresh parsley before serving.
