- 2 cups ricotta cheese
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 1/2 teaspoon lemon zest
- 1 pre-made pie crust
- 1/4 cup raisins (optional)
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix ricotta cheese and sugar until smooth.
- Add in eggs, vanilla extract, lemon juice, and lemon zest. Mix well.
- If desired, fold in raisins and cinnamon.
- Pour the mixture into the pie crust.
- Bake for 45-50 minutes or until set.
- Let it cool before serving.

- Top with powdered sugar if desired.
