A creamy and spicy potato salad with jalapeños and cheese.
Ingredients

- 2 pounds potatoes, diced
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapeños
- 1/4 cup green onions, chopped
- 1 tablespoon garlic powder
- Salt and pepper to taste
Instructions
- Boil the potatoes until tender, about 15 minutes.
- Drain and let them cool.
- In a large bowl, mix mayonnaise, sour cream, garlic powder, salt, and pepper.
- Add cooled potatoes, jalapeños, cheese, and green onions to the bowl.
- Toss gently to combine all ingredients.
- Chill in the refrigerator for at least one hour before serving.
Notes
- Adjust jalapeño quantity for desired spice level.
- Can be made a day ahead for better flavor.
- Garnish with additional green onions before serving.
