- 2 cups mixed dried fruits
- 1 cup dark rum
- 1 cup butter
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon allspice
- 1/4 teaspoon salt
- 1/2 cup molasses
- 1 teaspoon vanilla extract
Instructions
- Soak the mixed dried fruits in dark rum overnight.
- Preheat your oven to 300°F (150°C).
- Grease and line a cake pan.
- Cream the butter and brown sugar together until fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the soaked fruits, molasses, and vanilla extract.
- In a separate bowl, mix the flour, baking powder, spices, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared pan.
- Bake for 1.5 to 2 hours, or until a toothpick comes out clean.
- Allow to cool before removing from the pan.
