Ingredients

  • 1 lb chicken, diced
  • 1 lb shrimp, peeled
  • 1 lb andouille sausage, sliced
  • 2 cups rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 1 can diced tomatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and sausage. Cook until browned.
  3. Add onion, bell pepper, celery, and garlic. Sauté until soft.
  4. Stir in rice and Cajun seasoning. Cook for 2 minutes.
  5. Add chicken broth and diced tomatoes. Bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Add shrimp, stir, and cook for an additional 5 minutes.
  8. Remove from heat. Let sit for 5 minutes before serving.
