Ingredients

- 1 lb chicken, diced
- 1 lb shrimp, peeled
- 1 lb andouille sausage, sliced
- 2 cups rice
- 4 cups chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 2 tsp Cajun seasoning
- 1 can diced tomatoes
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and sausage. Cook until browned.
- Add onion, bell pepper, celery, and garlic. Sauté until soft.
- Stir in rice and Cajun seasoning. Cook for 2 minutes.
- Add chicken broth and diced tomatoes. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Add shrimp, stir, and cook for an additional 5 minutes.
- Remove from heat. Let sit for 5 minutes before serving.

- Adjust spice level to your taste.
- Use fresh herbs for added flavor.
- Can substitute vegetables as desired.
