Jerk Meatballs in Coconut Curry is a flavorful dish combining spicy meatballs with a creamy coconut sauce.
Ingredients

- 1 lb ground meat (beef, chicken, or turkey)
- 2 tbsp jerk seasoning
- 1/2 cup breadcrumbs
- 1 egg
- 1 can (13.5 oz) coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 red bell pepper, diced
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix ground meat, jerk seasoning, breadcrumbs, and egg.
- Form meatballs and place on a baking sheet.
- Bake meatballs for 20 minutes or until cooked through.
- In a large pan, heat oil over medium heat.
- Add onion, garlic, and ginger; sauté until softened.
- Add red bell pepper and cook for 2 more minutes.
- Pour in coconut milk and bring to a simmer.
- Add baked meatballs to the sauce and cook for 5 minutes.
- Season with salt and pepper; serve hot.
Notes
- Serve with rice or bread.
- Adjust spice level by adding more or less jerk seasoning.
- Meatballs can be made ahead and frozen.
