Description

Jerk Meatballs in Coconut Curry is a flavorful dish combining spicy meatballs with a creamy coconut sauce.


Ingredients

  • 1 lb ground meat (beef, chicken, or turkey)
  • 2 tbsp jerk seasoning
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 can (13.5 oz) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 red bell pepper, diced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground meat, jerk seasoning, breadcrumbs, and egg.
  3. Form meatballs and place on a baking sheet.
  4. Bake meatballs for 20 minutes or until cooked through.
  5. In a large pan, heat oil over medium heat.
  6. Add onion, garlic, and ginger; sauté until softened.
  7. Add red bell pepper and cook for 2 more minutes.
  8. Pour in coconut milk and bring to a simmer.
  9. Add baked meatballs to the sauce and cook for 5 minutes.
  10. Season with salt and pepper; serve hot.

Notes

  • Serve with rice or bread.
  • Adjust spice level by adding more or less jerk seasoning.
  • Meatballs can be made ahead and frozen.
