Description
A refreshing pasta salad inspired by the flavors of Jimmy Buffett.
Ingredients

- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup black olives, sliced
- 1 cup mozzarella balls
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, black olives, and mozzarella.
- Add the cooled pasta to the bowl.
- In a separate bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour dressing over pasta and vegetables. Toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add your favorite vegetables.
- This salad can be made a day in advance.
