Description

A refreshing pasta salad inspired by the flavors of Jimmy Buffett.


Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella balls
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, black olives, and mozzarella.
  3. Add the cooled pasta to the bowl.
  4. In a separate bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  5. Pour dressing over pasta and vegetables. Toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
