A creamy and delicious keto-friendly broccoli soup made in a crockpot.
Ingredients

- 4 cups broccoli florets
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Place broccoli, onion, garlic, and vegetable broth in the crockpot.
- Cook on low for 6 hours or until broccoli is tender.
- Blend the soup until smooth using an immersion blender.
- Stir in heavy cream and cheddar cheese.
- Season with salt and pepper.
- Serve hot.

- Adjust the thickness by adding more or less broth.
- Garnish with additional cheese if desired.
