A delicious keto-friendly slow cooker beef and broccoli dish.
Ingredients

- 1.5 lbs flank steak, sliced thin
- 3 cups broccoli florets
- 1/2 cup soy sauce
- 1/4 cup beef broth
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon erythritol or preferred sweetener
- 1 tablespoon cornstarch (optional for thickening)
Instructions
- Place sliced beef in the slow cooker.
- Add soy sauce, beef broth, sesame oil, garlic, ginger, and sweetener.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes, add broccoli florets.
- If using, mix cornstarch with water and stir in to thicken sauce.
- Serve hot and enjoy.
Notes
- Adjust the amount of soy sauce for saltiness.
- Use fresh broccoli for better texture.
- Serve over cauliflower rice for a complete meal.
