Ingredients

- 1 can kidney beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil

- Salt to taste
- Pepper to taste
Instructions
- In a large bowl, combine kidney beans, cherry tomatoes, red onion, bell pepper, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Let the salad sit for 10 minutes to allow flavors to meld.
- Serve chilled or at room temperature.

- Feel free to add other vegetables like cucumbers or corn.
