A simple and nutritious kitchari recipe made with rice and lentils.


Ingredients

  • 1 cup basmati rice
  • 1/2 cup split yellow mung dal
  • 4 cups water
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 1 cup mixed vegetables (carrots, peas, spinach)

Instructions

  1. Rinse the rice and mung dal under cold water until water runs clear.
  2. In a large pot, heat ghee or oil over medium heat.
  3. Add cumin seeds and let them sizzle for a few seconds.
  4. Add turmeric powder and stir for a few seconds.
  5. Add the rinsed rice and mung dal to the pot and stir well.
  6. Add water and salt. Bring to a boil.
  7. Reduce heat to low, cover, and simmer for 20 minutes.
  8. Add mixed vegetables, cover, and cook for another 10 minutes.
  9. Remove from heat and let it sit for 5 minutes before serving.
