Description
A simple and nutritious kitchari recipe made with rice and lentils.
Ingredients
Scale
- 1 cup basmati rice
- 1/2 cup split yellow mung dal
- 4 cups water
- 1 tablespoon ghee or oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- Salt to taste
- 1 cup mixed vegetables (carrots, peas, spinach)
Instructions
- Rinse the rice and mung dal under cold water until water runs clear.
- In a large pot, heat ghee or oil over medium heat.
- Add cumin seeds and let them sizzle for a few seconds.
- Add turmeric powder and stir for a few seconds.
- Add the rinsed rice and mung dal to the pot and stir well.
- Add water and salt. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes.
- Add mixed vegetables, cover, and cook for another 10 minutes.
- Remove from heat and let it sit for 5 minutes before serving.
Notes
- Adjust spices according to your taste.
- Can be served with yogurt or pickles.
