Description

Korean Japchae noodles are a delightful dish made from sweet potato starch, featuring a colorful mix of vegetables and sometimes meat, all tossed in a savory sauce.


Ingredients

  • Sweet potato noodles (dangmyeon) – 200 grams
  • Beef (thinly sliced) – 150 grams
  • Fresh spinach – 100 grams
  • Carrots (julienned) – 1 medium
  • Shiitake mushrooms (sliced) – 100 grams
  • Onion (sliced) – 1 medium
  • Garlic (minced) – 2 cloves
  • Soy sauce – 3 tablespoons
  • Sesame oil – 2 tablespoons
  • Vegetable oil – 1 tablespoon
  • Salt and pepper – to taste

Instructions

  1. Soak the sweet potato noodles in warm water for about 30 minutes, then drain and set aside.
  2. Wash the fresh spinach, julienne the carrots, and slice the shiitake mushrooms and onion.
  3. Heat a large skillet or wok over medium-high heat, add vegetable oil, and stir-fry the beef until browned, then set aside.
  4. In the same skillet, stir-fry the onions, carrots, and shiitake mushrooms for about 5 minutes, then add garlic and stir for an additional minute.
  5. Add the spinach and stir until wilted, then combine the soaked noodles and cooked beef, adding soy sauce and sesame oil. Toss to combine and heat through.
