Description
Korean Japchae noodles are a delightful dish made from sweet potato starch, featuring a colorful mix of vegetables and sometimes meat, all tossed in a savory sauce.
Ingredients
- Sweet potato noodles (dangmyeon) – 200 grams
- Beef (thinly sliced) – 150 grams
- Fresh spinach – 100 grams
- Carrots (julienned) – 1 medium
- Shiitake mushrooms (sliced) – 100 grams
- Onion (sliced) – 1 medium
- Garlic (minced) – 2 cloves
- Soy sauce – 3 tablespoons
- Sesame oil – 2 tablespoons
- Vegetable oil – 1 tablespoon
- Salt and pepper – to taste
Instructions
- Soak the sweet potato noodles in warm water for about 30 minutes, then drain and set aside.
- Wash the fresh spinach, julienne the carrots, and slice the shiitake mushrooms and onion.
- Heat a large skillet or wok over medium-high heat, add vegetable oil, and stir-fry the beef until browned, then set aside.
- In the same skillet, stir-fry the onions, carrots, and shiitake mushrooms for about 5 minutes, then add garlic and stir for an additional minute.
- Add the spinach and stir until wilted, then combine the soaked noodles and cooked beef, adding soy sauce and sesame oil. Toss to combine and heat through.

- Be careful not to overcook the sweet potato noodles to maintain their chewiness.
