A quick and easy recipe for leftover chicken gyros bowls.
Ingredients

- 2 cups leftover cooked chicken, shredded
- 1 cup cooked rice
- 1 cup diced tomatoes
- 1 cup cucumber, diced
- 1/2 cup red onion, sliced
- 1/2 cup tzatziki sauce
- 1/4 cup feta cheese, crumbled
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add shredded chicken and season with salt and pepper.
- Warm the chicken for about 5 minutes.
- In a bowl, layer rice, chicken, tomatoes, cucumber, and red onion.
- Top with tzatziki sauce and feta cheese.
- Serve immediately.
Notes
- Use any leftover chicken, grilled or roasted works well.
- Feel free to add other vegetables like bell peppers or olives.
- Store leftovers in the fridge for up to 3 days.
