Ingredients

- Plain yogurt or buttermilk: 1/2 cup (120ml)
- Lemon zest: Zest of 2 lemons
- Fresh lemon juice: 1/4 cup (60ml)
- Vanilla extract: 1 tsp
- Ground almonds: 1/2 cup (50g)
- Chopped pistachios: 1/2 cup (60g)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground almonds.
- In a large bowl, cream the softened unsalted butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the yogurt, lemon zest, lemon juice, and vanilla extract.
- Gently fold the dry ingredients into the wet mixture until just combined, then fold in the chopped pistachios.
- Pour the batter into the prepared loaf pan, smooth the top, and sprinkle extra pistachios on top. Bake for 45-50 minutes.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Drizzle with a glaze made from powdered sugar and lemon juice before serving.
