Ingredients

  • Granulated sugar: 3/4 cup (150g)
  • Large eggs: 2
  • Plain yogurt or buttermilk: 1/2 cup (120ml)
  • Lemon zest: Zest of 2 lemons
  • Fresh lemon juice: 1/4 cup (60ml)
  • Vanilla extract: 1 tsp
  • Ground almonds: 1/2 cup (50g)
  • Chopped pistachios: 1/2 cup (60g)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan and line the bottom with parchment paper.
  3. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground almonds.
  4. In a large bowl, cream the softened unsalted butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the yogurt, lemon zest, lemon juice, and vanilla extract.
  5. Gently fold the dry ingredients into the wet mixture until just combined, then fold in the chopped pistachios.
  6. Pour the batter into the prepared loaf pan, smooth the top, and sprinkle extra pistachios on top. Bake for 45-50 minutes.
  7. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Drizzle with a glaze made from powdered sugar and lemon juice before serving.
