Ingredients

  • 1 cup granulated sugar

  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix gluten-free flour, butter, powdered sugar, and salt.
  3. Press the mixture into the bottom of a greased 8×8 inch baking dish.
  4. Bake for 15 minutes.
  5. In another bowl, whisk eggs, granulated sugar, lemon juice, lemon zest, and baking powder.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20 minutes.
  8. Let it cool before cutting into squares.
