A gluten-free lemon bars recipe that is tangy and sweet.
Ingredients

- 1 cup gluten-free flour
- 1/2 cup butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix gluten-free flour, butter, powdered sugar, and salt.
- Press the mixture into the bottom of a greased 8×8 inch baking dish.
- Bake for 15 minutes.
- In another bowl, whisk eggs, granulated sugar, lemon juice, lemon zest, and baking powder.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 20 minutes.
- Let it cool before cutting into squares.
Notes
- Store in the refrigerator for up to a week.
- You can dust with extra powdered sugar before serving.
