Ingredients

Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, lemon zest, herbs, salt, and pepper.
- Add chicken thighs to the mixture and coat well.
- Place cubed potatoes in a baking dish.
- Arrange chicken on top of the potatoes.
- Pour any remaining marinade over the chicken and potatoes.
- Bake for 40-45 minutes or until chicken is cooked through.
- Serve hot and enjoy.
