Ingredients

- 4 salmon fillets
- 2 lemons, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 pound baby potatoes, halved
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic, oregano, thyme, salt, and pepper.
- Coat the salmon fillets with the olive oil mixture.
- Place the salmon on a baking sheet lined with parchment paper.
- Arrange lemon slices on top of the salmon.
- In a separate bowl, toss the halved baby potatoes with remaining olive oil mixture.
- Spread the potatoes around the salmon on the baking sheet.
- Bake for 20-25 minutes until the salmon is cooked through and potatoes are tender.
- Serve warm.
