Ingredients

  • 2 lemons, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 pound baby potatoes, halved

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, oregano, thyme, salt, and pepper.
  3. Coat the salmon fillets with the olive oil mixture.
  4. Place the salmon on a baking sheet lined with parchment paper.
  5. Arrange lemon slices on top of the salmon.
  6. In a separate bowl, toss the halved baby potatoes with remaining olive oil mixture.
  7. Spread the potatoes around the salmon on the baking sheet.
  8. Bake for 20-25 minutes until the salmon is cooked through and potatoes are tender.
  9. Serve warm.
