- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, butter, powdered sugar, and salt to form a crust.
- Press the mixture into a greased 9×9 inch baking dish.
- Bake for 15 minutes until lightly golden.
- In another bowl, whisk together granulated sugar, eggs, lemon juice, and zest.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 20 minutes.
- In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add sugar and beat until stiff peaks form.
- Spread meringue over the lemon layer.
- Bake for another 10 minutes until meringue is golden brown.
- Cool before cutting into bars.
Notes
- Store leftovers in the refrigerator.
- For a stronger lemon flavor, add more lemon zest.
- Ensure egg whites are at room temperature for better volume.
