- 1 pre-made pie crust
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 cup water
- 3 large egg yolks, beaten
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons unsalted butter
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine sugar, cornstarch, and salt.
- Add water and cook over medium heat until thickened.
- Stir in egg yolks, lemon juice, lemon zest, and butter.
- Pour filling into the pie crust.
- In a bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add powdered sugar and beat until stiff peaks form.
- Spread meringue over the pie filling.
- Bake for 10-15 minutes until meringue is lightly browned.
- Cool before serving.

- Store leftovers in the refrigerator.
- Use fresh lemons for best flavor.
- Ensure meringue is spread to the edges to prevent shrinking.
