  • 2 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 2 medium lemons, juiced and zested
  • 2 tablespoons butter
  • 4 egg yolks, beaten
  • 1 9-inch prepared pie crust, baked
  • 4 egg whites
  • 1/2 cup white sugar

Instructions

  1. Prepare the pie crust by either making it from scratch or using a store-bought one. Bake it at 375°F (190°C) for about 10 minutes until lightly golden, then cool.
  2. In a medium saucepan, mix 1 cup sugar, 2 tablespoons flour, 3 tablespoons cornstarch, and 1/4 teaspoon salt. Gradually add 1 1/2 cups of water, lemon juice, and zest. Cook over medium heat until boiling, then reduce to a simmer for 2 minutes until thickened.
  3. In a separate bowl, beat the egg yolks lightly. Gradually whisk in 1/2 cup of the hot lemon mixture. Pour this back into the saucepan and cook for another minute until thickened. Remove from heat and stir in 2 tablespoons of butter.
  4. Pour the lemon filling into the cooled pie crust.
  5. Beat 4 egg whites until foamy, then gradually add 1/2 cup of sugar. Beat until stiff peaks form.
  6. Spread the meringue over the hot lemon filling, sealing the edges well to prevent shrinkage. Create peaks for texture.
  7. Bake the pie at 325°F (165°C) for 20-25 minutes until the meringue is golden brown. Let it cool on a wire rack.
  8. Cool the pie completely at room temperature before chilling it in the refrigerator for a few hours to set the filling.
