Ingredients

  • 1 cup lentils
  • 2 carrots, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cold water.
  2. Heat olive oil in a pot over medium heat.
  3. Add onions and garlic, sauté until soft.
  4. Add carrots and bell pepper, cook for 5 minutes.
  5. Add lentils, vegetable broth, diced tomatoes, cumin, and paprika.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Season with salt and pepper before serving.
