Ingredients

- 1 cup lentils
- 2 carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water.
- Heat olive oil in a pot over medium heat.
- Add onions and garlic, sauté until soft.
- Add carrots and bell pepper, cook for 5 minutes.
- Add lentils, vegetable broth, diced tomatoes, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper before serving.
Notes
- This stew can be made ahead and stored in the fridge.
- Feel free to add any seasonal vegetables.
