Ingredients

  • 1 cup lentils
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, chopped
  • 1/4 cup parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice

Instructions

  1. Rinse lentils under cold water.
  2. In a pot, combine lentils and water. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes or until tender.
  4. Drain and let cool.
  5. In a large bowl, mix cooled lentils, cucumber, bell pepper, red onion, and parsley.
  6. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  7. Pour dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.
