A plant-based alternative to traditional taco meat made from lentils.
Ingredients

- 1 cup lentils
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
Instructions
- Rinse and drain the lentils.
- In a pot, combine lentils and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes until lentils are tender.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add cooked lentils, chili powder, cumin, smoked paprika, salt, and pepper.
- Cook for another 5-7 minutes, stirring occasionally.
- Serve in taco shells with your favorite toppings.

- Adjust spices according to your taste.
- Can be stored in the fridge for up to 5 days.
