Ingredients

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse and drain the lentils.
  2. In a pot, combine lentils and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion and garlic, sauté until soft.
  6. Add cooked lentils, chili powder, cumin, smoked paprika, salt, and pepper.
  7. Cook for another 5-7 minutes, stirring occasionally.
  8. Serve in taco shells with your favorite toppings.
