Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a bowl, cream together the butter and granulated sugar.
  4. Add eggs one at a time, mixing well after each.
  5. Mix in limoncello and lemon zest.
  6. In another bowl, combine flour, baking powder, and salt.
  7. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  8. Pour the batter into the prepared pan.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let it cool completely before removing from the pan.
  11. Whip heavy cream and fold in mascarpone cheese.
  12. Spread the mascarpone mixture over the cooled cake.
  13. Dust with powdered sugar before serving.
